What is a convection oven

The RETIGO convection oven is an equipment used for baking of products from either fresh or frozen dough. Any RETIGO convection oven can be applied where pastry is produced from a fresh dough, i.e. bakeries, supermarkets, hotels, etc. In cases when it is necessary to prepare fresh pastry from a frozen dough (coffee shops, tea shops, etc.) RETIGO convection ovens can be used as well.
