City Club Restaurant, located near the center of Rožnov pod Radhoštěm, offers modern cuisine along with popular international specialties. The restaurant places great emphasis on high-quality ingredients and professional kitchen equipment. In 2023, they added a Retigo combi oven to their kitchen, which quickly became an essential part of their daily operations. In the following interview with chef Petr Jurajda, you’ll find out how this appliance makes the kitchen team’s work easier.
What do you prepare in the combi oven?
Absolutely everything – from potatoes and vegetables to roasted meats. Really everything.
Which programs do you use the most?
We prefer to use our own custom programs that we've set up ourselves and know work well for us. That significantly speeds up and simplifies our work. We also use low-temperature overnight cooking, especially when preparing beef ribs. They cook for a long time – the whole night at a lower temperature.
At what time of day is the combi oven most helpful to you?
Definitely during lunchtime, when we prepare à la carte dishes. In our restaurant, this mainly involves different methods of preparing meat, such as sous-vide.
What do you think of the Retigo combi oven controls? Do they suit you?
The controls are fast and simple. The display responds very reliably, even when wearing greasy gloves, which is a huge help.
