What role does the Retigo combi oven play in your kitchen?

The combi oven is an absolute cornerstone of our kitchen. We use it from morning to evening – for cooking, baking, breakfast preparation, and slow overnight roasting. Our entire menu is built around steam cooking because we want to cook in a simple, clean, and efficient way.

What specific functions do you use most often?

We make extensive use of low-temperature overnight cooking. During the day, we use steam forYeast dumplings, House-made burger buns, Regeneration of pre-prepared meals (e.g. roasted pork, schnitzels), Breakfast items – fried eggs, scrambled eggs, sausages, Sous-vide cooking and then grilling ribs and steaks. We also use custom programs tailored to our needs.

What do you appreciate about the combi oven controls?

They're intuitive, easy to understand, and reliable. The touch display works perfectly – even with greasy or dirty hands. We really appreciate the ability to fine-tune steam and temperature settings.

Do you use the combi oven for dough proofing as well?

Yes – regularly. We proof dough for dumplings or burger buns directly in the combi oven, because we can set a stable temperature and be sure of the result – no fluctuations like when proofing on a countertop, where weather, air pressure, or yeast quality can all affect the outcome.

What has your experience with Retigo service been like?

Excellent. We're based in Rožnov, so the technician gets to us quickly – when we had to replace a lightbulb, it was done in 10 minutes, including time for a coffee. But for the most part, we handle maintenance ourselves (like filters), and we haven’t had any issues.

Do you remember the first dish you prepared in the combi oven?

Eggs for my mom (laughs). She was visiting us, and we were experimenting to see what the oven could do. We were amazed – from that moment, we knew we had made the right investment.

When you hear the word “Retigo,” what’s the first thing that comes to mind?

Professionalism.
