It's January, what menu are you currently offering?

We are preparing a completely new tasting menu and we are also planning changes to the regular menu. We tried out most of the new menu at our New Year's Eve gala dinner. 

So guests can come to you for both à la carte and tasting menus?

Yes, exactly. We currently have a six-course tasting menu and a classic à la carte menu. 

What do you prepare in the Retigo combi oven?

You could say everything on our menu. From breakfast, where we use it to prepare buns, cakes, and homemade bread, to roasting meat, vegetables, and other dishes. It's a versatile helper for everyday. 

Do you use preset programs or do you set your own?

We mostly set our own programs, as the presets are not so useful for us. We have also modified the bread baking program a little. We use steam baking and classic baking the most.

What function or feature do you appreciate the most?

The performance of the combi oven. The performance is really noticeable. We bake the same things in it as we did before in other combi ovens, but in much less time.

What do you see as the biggest benefit for your kitchen?

First and foremost, it's reliability. When I know that I'm putting a duck in for two minutes, I can be sure that the combi oven will maintain a stable temperature, heat up quickly, cool down quickly, and the result will be exactly as we want it. Then there's speed. That's very important for us on busy Friday evenings. 

Would you recommend Evolution to other businesses?

Definitely, it's a great machine.
