What is special about the restaurant at the Stare Casy guesthouse?
We have local suppliers, we cook exclusively Czech cuisine, and we also prepare meat and pizza à la minute. We also focus on weddings, celebrations, and social events.
It is a guesthouse. Do you offer complete catering for guests?
Yes, we prepare breakfast for them. They can also enjoy the daily menu and a special weekend menu, which we try to approach innovatively. But guests still like to return to classics such as svíčková or halušky, which are on our regular menu.
Who puts the menu together?
It's a collective effort. There are four of us chefs here, and we think about it together.
What do you use Retigo Evolution combi ovens for?
We have two combi ovens. We use one mainly for regenerating dishes, ready-made meals that we have prepared throughout the day, such as dumplings, gnocchi, and various meats. We use the other one to grill meat, which we prepare as quick meals. But we also use slow cooking to prepare meat, and steam cooking primarily for dumplings. It can be said that we use all the available functions throughout the year.
From morning until noon, when we prepare for the whole day, we use both convection ovens to their fullest. Then, as needed.
Do you use preset programs or do you set them yourself?
We usually adjust them as needed. We have a preset temperature for grilling and similarly for regeneration.
What feature or function do you appreciate the most?
Easy maintenance and cleaning. A clear display and controls that are not complicated compared to other brands.
Do you have any ideas for further improvements?
I think the combi ovens are top-notch. If I had to compare them to something, it would be a smartphone or computer that can do everything.
Would you recommend Retigo to other businesses?
Definitely. I think it can be used in a wide range of catering establishments.
